    In a small bowl, mix together the cumin, garlic powder, chili powder, salt, and black pepper. Drizzle the chicken breasts with olive oil, then generously sprinkle the spice mixture evenly over both sides of each chicken breast. Rub the seasoning in with your hands for better coverage.

    Place the baking dish in the preheated oven, uncovered. Bake for 20–25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when checked with a meat thermometer. The salsa should be bubbling around the edges.

    Remove the dish from the oven and sprinkle the shredded Mexican cheese blend evenly over each chicken breast. Return the dish to the oven and switch to broil on high for 2–3 minutes, or until the cheese is melted, bubbly, and lightly golden. Watch it closely to avoid burning.

    Remove the baked salsa chicken from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat. Top with fresh chopped cilantro, avocado slices, a squeeze of lime juice, a dollop of sour cream, and sliced jalapeños if desired.

💡 Tip: For even cooking, try to use chicken breasts that are similar in size and thickness. If your chicken breasts are very thick, consider butterflying them or pounding them to an even ¾-inch thickness before seasoning. This ensures they cook through evenly without drying out on the thinner edges. You can also use chicken thighs for an even juicier result — just adjust the baking time by an extra 5–10 minutes.
